Are there people search websites available in the EU? If so, why can’t I sign up for DeleteMe or similar services to remove my personal information from these websites

In sweden, those records are public and nothing you can do about as a swedish citizen. What goes in the rest of the EU I don't know.

What happens if you, say, suspect you may be stalked?

Get a gun, I guess. The swedes manufacturer more guns per capita than any country in the world.

It’s from a time where we didn’t have digital contact lists and no internet. So what if you want to call the bakery down the street? You look up a public record like YellowPages. And the same was true for people too. I know it’s hard to imagine now with plenty of Indian call centers social engineering grandma, but the only real “wow”here is why they didn’t change this yet.

Oh wait I thought the people's browser search history is public. My English is so great it's actually terrible.

We have public records with name, address and phone number where i live. If you don't want to be searchable in this registry, you just login to citizens self-service (or go to townhall if you don't want to/can't do it yourself online) and select that you want "secret address", and your info is purged from the list. No need to go through weird and semi-sketchy third parties to get it done. I'm not sure how other EU countries deal with this.
