Personally, I'm a huge fan of Hollow Knight, Ori and the (Blind Forest/Will of the Wisps), and Kingdom Hearts. Orchestral soundtracks are just something else...

Final Fantasy: Crystal Chronicles' soundtrack holds a special place in my heart. Lots of really interesting instruments you don't hear in many other fantasy games.
